Choose Wine by Your Palate: A Sommelier's Six-Dial Method

Forget the label and the score. Six dials (body, tannin, acidity, sweetness, alcohol and oak) tell you what you will actually enjoy.

Most men choose wine the way they choose a tie at an airport: by price, label or a score on a shelf card. Sommeliers work differently. Before they think about a region or a producer, they think about structure, the handful of sensations every wine delivers wherever it comes from. Learn to name them and the wine list stops being a test. It becomes a menu built around you, and every bottle you open teaches you something useful about the next one.

The six dials

  • Body. The weight of the wine in your mouth, like the difference between skimmed and whole milk. Alcohol, sugar and extract all add weight.
  • Tannin. The drying, grippy feeling on gums and tongue, mostly from grape skins, seeds and stems, sometimes from oak. Above all a red-wine dial.
  • Acidity. What makes your mouth water. High acidity feels fresh and bright; low acidity feels soft and round.
  • Sweetness. Sugar left after fermentation. Many wines that seem sweet are in fact dry but very fruity.
  • Alcohol. A warming sensation at the back of the throat. Higher alcohol usually signals more body and a riper style; check the label.
  • Oak. Vanilla, toast, spice or coconut notes and a rounder texture from barrel ageing. Some wines see no oak at all.
You do not need to know a thousand wines. You need to know which six sensations you like, and how much of each.
Two glasses that look alike can sit at opposite ends of every dial.
Two glasses that look alike can sit at opposite ends of every dial.

Map your palate in one evening

Open bottles that sit at opposite ends of the dials and taste them side by side, ideally with friends so nothing goes to waste. Note which glass you reach for again. That instinct is your palate, and it is more reliable than any score. Professionals use the same logic: the WSET Systematic Approach to Tasting asks students to rate each of these dials before they ever guess a grape or a region.

  • Light, high-acid, low-tannin red: Pinot Noir from Burgundy or Gamay from Beaujolais.
  • Full, firmly tannic red: Cabernet Sauvignon from Napa or the Médoc.
  • Crisp, unoaked white: Sauvignon Blanc from the Loire or a Chablis.
  • Rich, oaked white: barrel-aged Chardonnay from California or the Côte de Beaune.

Order with confidence

  • Describe the dials, not the price: medium body, fresh acidity, soft tannins, little oak.
  • Name one wine you loved and ask for something similar from another region.
  • Like bold reds but find them heavy? Ask for high-acid reds such as Nebbiolo or Sangiovese.
  • Taste slowly, drink water alongside and enjoy wine in moderation: the goal is pleasure, not volume.

Key takeaways

  • Structure beats labels: body, tannin, acidity, sweetness, alcohol and oak.
  • Fruity is not the same as sweet; most fruity wines are dry.
  • Taste opposites side by side in one evening to map your palate.
  • Order by describing the dials, not the price, and drink in moderation.

FAQ

What does body mean in wine?

Body is the perceived weight of the wine in your mouth. Alcohol, sugar and extract make a wine feel fuller, the way whole milk feels heavier than skimmed.

Is a fruity wine the same as a sweet wine?

No. Many dry wines smell and taste of ripe fruit but hold little sugar. Sweetness is about sugar; fruitiness is about aroma and flavour.

How do I tell a sommelier what I like?

Describe structure (body, tannin, acidity, sweetness, oak) and give a price range. Naming one wine you enjoyed helps even more.
