The Perfect Steak, Reverse-Seared
For a thick steak with an even centre and a deep crust, reverse searing rewards patience and a reliable thermometer.

Reverse searing turns the usual steak routine around. A thick cut cooks gently first, then meets intense heat for its final crust. The method gives you more control over the interior and makes it easier to time dinner, provided you pay attention rather than treat it as a timer-only recipe. Use a clean thermometer, start with a dry surface and keep the seasoning simple.
Low heat, steady progress
Choose a steak of even thickness, ideally around four to five centimetres, so it cooks predictably. Pat it dry and season with salt. Set an oven or covered grill to a gentle temperature, roughly 110–120°C, and cook the steak on a rack until it approaches your preferred final doneness. Exact timing depends on thickness, starting temperature and equipment; a thermometer is more useful than a fixed minute count.
Take the steak out before it reaches its final target because the sear and brief rest will add heat. Keep food safety in mind, and use clean utensils and surfaces for cooked food. If you are cooking for someone vulnerable or need a specific doneness for safety, follow reliable food-safety guidance rather than relying on a general restaurant-style preference.
Finish hot and fast
Heat a heavy pan or grill until properly hot, then sear the steak briefly on each side to build a browned crust. A little high-heat oil can help in a pan; on a grill, manage flare-ups and keep your attention on the food. Add butter or aromatics only if you like, and do so carefully: butter can brown quickly over intense heat.
Rest the steak for a few minutes while you finish the sides. The rest need not become a ceremony; it simply gives the surface a moment to settle and makes serving easier. Slice across the grain with a sharp knife, season to taste and bring the plate to the table while everything is warm. Good steak needs little decoration.
The method is adaptable, not magical. A thinner steak may cook too quickly for the same approach, and every oven, grill and cut behaves differently. Keep notes on what worked, use temperature as your guide and adjust next time. Reverse searing is especially useful when you want a composed meal rather than a dramatic last-minute gamble.
Das Wichtigste
- Use a thick, evenly cut steak.
- Cook gently before the hot sear.
- A thermometer beats guesswork.
- Rest briefly before slicing.
